SRS Roast Leg Of Lamb

SRS Roast Leg of Lamb

This is a very simple but elegant way to prepare
a leg of lamb.

1 Leg of lamb  4-6 ilbs
3 cloves garlic cit in slivers
2 tsp dried rosemary or basil, crushed
1/2 tsp ground black pepper
1/2 cup dry red wine

Trim any external fat off the leg, pat dry.  Using a
sharp knife make deep slits in the meat inserting
garlic slivers in each slit.  Mix the herbs and
pepper in a small bowl.  Sprinkle the leg with red
wine and then rub the herb/pepper mix onto the
lamb. Bake (uncovered) at 400 degrees F for 15
minutes. Reduce the heat to 350 and cook
allowing about 25 minutes per pound. Baste every
20 minutes or so.
